Anda curry🍛

Indian cuisine is diverse and egg curry is made in numerous ways in each region. In this post I share with you the most basics of making a good delicious Indian egg curry & its variations. Egg Curry is a deliciously rich onion tomato gravy, tastes exactly like the ones you get in dhabas. These are perfect with jeera rice, butter naan, paratha, chapati.  Ingredients : 4 eggs oil 1tbs butter Chopped onion Curry leaves For grind: 1 Tomato 2 red chillis Coriander leaves Coriander powder Cumin powder 1 bay leaf 2 cloves 2 black peppers 2 cardamoms 1/4 cup coconut (optional)  Salt to taste Instructions: Boil the egg and keep it to cool on the side.  Put all the given above ingredients in a mixer jar and grind it.  Now peel the eggs.  Heat a pan and put some oil in it and fry the eggs.  In a same pan add 1 tsp oil and 1 tbls butter. Mutton Sufiyani Biriyani

 This biriyani is known as "safaida" for it's white colour.  Biryani is one of the most famous dishes in the South Asian region especially people from Pakistan, India and Bangladesh love to serve it on a special occasion and festive moments.  Here, I make this biryani with mutton but you can also try with chicken.  Ingredients: Oil - 1.5 Tbsp Whole Garam Masala: Cumin seeds - 1 Tsp Cloves - 9 Black Pepper - 15 Star aniseeds - 1 Cinnamon - 2 sticks (3") Bay leaves - 3 Onion slices - 1 Cup Ginger Paste - 1 Tsp Garlic Paste - 1 Tsp Chicken - 600 Gms Salt - 1 Tsp Yogurt - 1 Cup Green Chilies - 5 to 6 Black Pepper Powder - ½ Tsp Milk (Doodh) - 1 Cup Boiled basmati rice Biryani essence Heat a pan, and add oil. Mutton malai boti

  Malai' means cream and 'boti' means a piece of mutton. This dish is known for its creamy, melt-in-the-mouth texture. Make them into paratha rolls or just dip them in chutney or ketchup. Ingredients : Lamb meat (boneless 1/2 kg)  Papaya paste (1/2 tsp)  Yogurt (1/2 cup)  Cream (1/2 cup)  Lemon juice ( 2 tbls)  Ginger 1 inch Garlic (7/8 cloves)  Coriander leaves (1/2 cup)  Green chili's 6/7 Roasted cumin seeds Black paper 5 tsp oil Instructions : Put all the above ingredients in a mixer jar .  and grind them.  Cut lamb meat into cubes and wash thoroughly.  In a bowl put  the ground paste add cubes of meat and mixwell.  Marinate this for 4-5 hours. Thread meat in skewers. Keep them on oven tray. Bake in a preheated oven on 175 C for 30 minutes. Malai boti is ready to serve. Try it and enjoy it.

Kolim wade

 Kolim’ is cooked like a fish curry, or made into ’kolim-wada’-something like a cutlet made by mixing the kolim with chopped onions, chillies, salt, flour and then often whipped-up with egg. It is also pickled with salt and spices to last over a year. My husband loves kolim vadas even my husband taught me to make kolim vadas.  So let's learn how makes kolim vadas.   Ingredients: Fresh kolim ( jawla) 250 grm Chopped onion (1 medium)  Ginger garlic paste 1 tsp Turmeric powder 1/2 tsp  Coriander powder 1/2 tsp Cumin powder 1/2 tsp Garam masala 1/2 tsp 2 chillies Chopped coriander leaves Gram flour Oil  Salt to taste Instructions: wash the kolim thoroughly.  mix all the ingredients given above thoughly.  give the material which we have prepared, By pressing with the help of your hands,  give it a round shape.   Easy chicken fry recipe: a simple and basic recipe for making chicken fry using chicken pieces and spices. There are probably thousands of different variations to an easy chicken fry recipe including what you can add to the marinade, the quantity of spices, whether you use pepper powder or not, etc.  When I went to keep the marinated chicken in the fridge, I saw chilli sauce kept in the fridge, so I thought let's try something new today.
